The Restaurant Manuale is IMPERIA's hand-cranked professional model — the direct descendant of the machine that made fresh pasta accessible to kitchens that couldn't justify the cost of a motor. Crank the handle, feel the resistance of the dough, watch the sheet emerge. Every dimension is adjustable through nine thickness settings, from 0.2 mm up to 2.5 mm. The chrome-plated steel rollers are the same specification as the motorised models. What changes is the speed — and in some kitchens, that slower pace is exactly the point. A chef who rolls by hand controls the dough in a way that a motor cannot replicate, and guests understand the difference.
